Very dark mahogany color with iodized reflections. It is a vinegar of sufficient density.
On the nose it has a high aromatic intensity, with balsamic aromas, raisin fruits (plums and raisins) and wood predominating. Spicy tones of esters and spices are valued, and the smells of roasted liquorice and tobacco are also noticeable. It is a vinegar that has great complexity and aromatic persistence due to its strong aging in Castilian oak barrels.
On the palate it appears as vinegar, velvety and with a great presence in the mouth. It's unhealthy and balanced. In the end, it leaves a slightly bitter taste due to its high maturation in Castilian oak barrels. Retronasal it presents a wide range of nuances and a very long aftertaste.
